- 1/2 cup brown sugar

- 1 cup buttermilk
- 2 large eggs

- 1/2 teaspoon salt
- 1 cup fresh or frozen cranberries
- 1/2 cup cream cheese, softened (for frosting)
- 1 cup powdered sugar (for frosting)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan.
- In a large bowl, cream the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add the eggs, one at a time, mixing well after each addition. Then, stir in the vanilla extract.
- In another bowl, whisk together the flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, alternating with buttermilk. Mix until just combined, then fold in the cranberries gently.
- Pour the batter into the prepared baking pan and smooth the top.
- Bake for 30-35 minutes, or until a toothpick comes out clean from the center.
- While the cake cools, prepare the frosting by beating the softened cream cheese and powdered sugar until smooth.
- Once the cake is completely cool, spread the frosting evenly across the top.
Notes
For a unique twist, consider adding chocolate chips or swapping cranberries for blueberries.
