Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan.
  2. In a large bowl, cream the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the eggs, one at a time, mixing well after each addition. Then, stir in the vanilla extract.
  4. In another bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, alternating with buttermilk. Mix until just combined, then fold in the cranberries gently.
  6. Pour the batter into the prepared baking pan and smooth the top.
  7. Bake for 30-35 minutes, or until a toothpick comes out clean from the center.
  8. While the cake cools, prepare the frosting by beating the softened cream cheese and powdered sugar until smooth.
  9. Once the cake is completely cool, spread the frosting evenly across the top.
