- 1 cup cranberry sauce (homemade or store-bought)
- 4 ounces pancetta, diced
- 1 tablespoon fresh thyme leaves
- 1 egg, beaten (for egg wash)
- Salt and pepper, to taste
- Fresh thyme sprigs, for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Line a baking sheet with parchment paper.
- Roll out the puff pastry on a floured surface and transfer it to the prepared sheet.
- In a medium skillet, cook the diced pancetta over medium heat until crispy. Drain excess grease on paper towels.
- Spread your cranberry sauce evenly over the pastry, leaving a 1-inch border.
- Top with Brie slices, crispy pancetta, and sprinkle with fresh thyme. Season with salt and pepper.
- Fold the edges over the filling to create a rustic look, then brush with beaten egg.
- Bake for 20-25 minutes or until the pastry is golden and flaky.
- Garnish with thyme sprigs once out of the oven, letting it cool slightly before slicing.
