- 2 cups fresh or frozen cranberries
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 cup rolled oats
- 1/2 cup brown sugar
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup cold butter
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking pan.
- In a saucepan over medium heat, combine the cranberries, granulated sugar, and vanilla. Cook until the cranberries start to burst and the mixture thickens, about 10 minutes. Set aside to cool.
- In a bowl, mix together the flour, oats, brown sugar, baking soda, and salt. Cut in the cold butter until the mixture resembles coarse crumbs.
- Press half of the crumb mixture into the bottom of the prepared pan. Pour the cranberry filling over the crust, and then sprinkle the remaining oat mixture on top.
- Bake for 30-35 minutes, or until the top is golden brown.
- Allow to cool before slicing into bars.
Notes
Top with whipped cream, vanilla ice cream, or powdered sugar for added elegance. Store in an airtight container at room temperature for up to 3 days.
