  • 1 orange, zested and juiced
  • 1 cup all-purpose flour

  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 egg
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a muffin tin or line it with paper liners.
  2. In a large bowl, mix together the yogurt, egg, orange juice, and vanilla extract until well combined.
  3. In another bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and orange zest.
  4. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
  5. Fold in the fresh cranberries carefully.
  6. Divide the batter evenly among muffin cups.
  7. Bake for 18-20 minutes, or until a toothpick inserted comes out clean.
  8. Let the muffins cool in the tin for a few minutes before transferring them to a wire rack.

Notes

For best results, check that all ingredients are fresh. If using frozen cranberries, do not thaw them before adding.
