- 1 cup plain yogurt (can substitute with Greek yogurt)
- 1 cup fresh cranberries (or frozen)
- 1 orange, zested and juiced
- 1 cup all-purpose flour
- 1/2 cup sugar (adjust to taste)
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 egg
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Grease a muffin tin or line it with paper liners.
- In a large bowl, mix together the yogurt, egg, orange juice, and vanilla extract until well combined.
- In another bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and orange zest.
- Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
- Fold in the fresh cranberries carefully.
- Divide the batter evenly among muffin cups.
- Bake for 18-20 minutes, or until a toothpick inserted comes out clean.
- Let the muffins cool in the tin for a few minutes before transferring them to a wire rack.
Notes
For best results, check that all ingredients are fresh. If using frozen cranberries, do not thaw them before adding.
