Ingredients

  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1/2 cup fresh cranberries, chopped
  • 1 tablespoon orange zest
  • 1/2 cup heavy cream
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix together the flour, sugar, baking powder, and salt.
  3. Cut in the cold, cubed butter until the mixture resembles coarse crumbs.
  4. Gently stir in the chopped cranberries and orange zest.
  5. In another bowl, whisk together the cream, egg, and vanilla until well combined.
  6. Pour the wet mixture into the dry ingredients and mix gently until just combined.
  7. On a floured surface, turn out the dough and gently knead it a few times before shaping it into a circle about 1 inch thick.
  8. Cut the dough into wedges and place them onto the prepared baking sheet.
  9. Bake for 15-20 minutes or until they are golden brown on top.
  10. Allow them to cool slightly before serving.

Notes

Best served warm. Can be stored at room temperature in an airtight container for 2 days or frozen for up to a month. Use an egg wash for a shiny finish.
