- 2 cups all-purpose flour
- 1/2 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, cold and cubed
- 1/2 cup fresh cranberries, chopped
- 1 tablespoon orange zest
- 1/2 cup heavy cream
- 1 large egg
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, mix together the flour, sugar, baking powder, and salt.
- Cut in the cold, cubed butter until the mixture resembles coarse crumbs.
- Gently stir in the chopped cranberries and orange zest.
- In another bowl, whisk together the cream, egg, and vanilla until well combined.
- Pour the wet mixture into the dry ingredients and mix gently until just combined.
- On a floured surface, turn out the dough and gently knead it a few times before shaping it into a circle about 1 inch thick.
- Cut the dough into wedges and place them onto the prepared baking sheet.
- Bake for 15-20 minutes or until they are golden brown on top.
- Allow them to cool slightly before serving.
Notes
Best served warm. Can be stored at room temperature in an airtight container for 2 days or frozen for up to a month. Use an egg wash for a shiny finish.
