Ingredients

- 1 cup oats
- 1/2 cup dried cranberries
- 1/2 cup pistachios, chopped
- 1/4 cup honey or maple syrup
- 1/2 cup nut butter (such as almond or peanut butter)
- 1/4 cup chia seeds
- 1/2 teaspoon vanilla extract
- A pinch of salt
Instructions
- In a large bowl, combine oats, dried cranberries, chopped pistachios, chia seeds, and salt.
- In another bowl, whisk together honey (or maple syrup), nut butter, and vanilla extract until smooth and creamy.
- Pour the wet mixture into the dry ingredients and stir until everything is well integrated.
- Roll the mixture into small balls (about one inch in diameter) and place them on a parchment-lined baking sheet.
- Refrigerate for at least 30 minutes to firm up.
- Store in an airtight container in the fridge for up to a week.
Notes
These energy bites can be frozen for up to three months. For a nut-free version, use sunflower seed butter.
