Ingredients

  • 1/2 cup dried cranberries
  • 1/2 cup pistachios, chopped
  • 1/4 cup honey or maple syrup
  • 1/2 cup nut butter (such as almond or peanut butter)
  • 1/4 cup chia seeds
  • 1/2 teaspoon vanilla extract
  • A pinch of salt

Instructions

  1. In a large bowl, combine oats, dried cranberries, chopped pistachios, chia seeds, and salt.
  2. In another bowl, whisk together honey (or maple syrup), nut butter, and vanilla extract until smooth and creamy.
  3. Pour the wet mixture into the dry ingredients and stir until everything is well integrated.
  4. Roll the mixture into small balls (about one inch in diameter) and place them on a parchment-lined baking sheet.
  5. Refrigerate for at least 30 minutes to firm up.
  6. Store in an airtight container in the fridge for up to a week.

Notes

These energy bites can be frozen for up to three months. For a nut-free version, use sunflower seed butter.
