Description

Ingredients

  • 2 cups rice
  • 1 pound chicken breasts, marinated
  • 1 cup queso cheese sauce
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Toppings (e.g., avocado, cilantro, lime wedges)

Instructions

  1. In a pot, heat olive oil over medium heat.
  2. Add marinated chicken and cook until browned and cooked through.
  3. Remove chicken and set aside.
  4. In the same pot, add rice and stir to coat in the oil.
  5. Pour in 4 cups of water and add cumin, paprika, salt, and pepper. Bring to a boil.
  6. Reduce heat, cover, and simmer for 15-20 minutes or until rice is fluffy.
  7. Once the rice is cooked, return the chicken to the pot and mix in the queso sauce.
  8. Serve with your favorite toppings.

Notes

Marinate the chicken for at least 1 hour or overnight for better flavor. Use long-grain rice for fluffier results.
