Ingredients

  • 1 lb butternut squash, peeled and cubed
  • 2 cups all-purpose flour
  • 1 egg
  • Salt and pepper to taste
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1/4 cup unsalted butter
  • 1 lb Italian sausage, casings removed
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1/2 teaspoon red pepper flakes

Instructions

  1. Boil the butternut squash in salted water until soft. Drain and let it cool, then mash until smooth.
  2. In a mixing bowl, combine the mashed squash with the egg, flour, salt, and pepper, stirring until a dough forms.
  3. Roll the dough into long ropes (about 1/2 inch thick) and cut into bite-sized pieces. Create ridges on the pieces using a fork.
  4. In a large pot of salted boiling water, add the gnocchi. They’re ready when they float to the surface. Drain and set aside.
  5. In a saucepan over medium heat, melt the butter and add minced garlic, cooking until fragrant. Stir in the heavy cream and let it simmer. Add grated Parmesan cheese and mix until the sauce thickens. Season with salt and pepper.
  6. In another pan, heat olive oil over medium heat. Sauté the onion until translucent, then add the sausage. Break it up while it cooks, adding minced garlic and red pepper flakes until browned.
  7. Toss the cooked gnocchi in the creamy sauce, then incorporate the sausage mixture.
  8. Plate your dish and garnish as desired.

Notes

Feel free to substitute Italian sausage for turkey or plant-based options. Store leftovers in an airtight container in the fridge for up to three days.
