- 1 can diced green chilies
- 4 cups chicken broth
- 1 cup cream cheese
- 1 cup shredded cheese (like cheddar or Monterey Jack)
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
Instructions
- In a large pot or slow cooker, combine the chicken, white beans, corn, diced onion, garlic, green chilies, and chicken broth.
- Season your mix with cumin, chili powder, salt, and pepper. Stir to combine.
- If using the stovetop, simmer for about 20-30 minutes, or in a crockpot on low for 4-6 hours until the chicken is cooked through.
- Remove the chicken, shred it into bite-sized pieces, and return it to the pot.
