A comforting creamy chicken pasta made in a crockpot, ideal for busy weeknights or lazy weekends.
Ingredients

- 2 boneless, skinless chicken breasts
- 1 cup pasta (your choice, such as penne or fusilli)
- 1 can cream of chicken soup
- 1 cup chicken broth
- 1 cup shredded cheese (mozzarella or cheddar)
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Optional: chopped parsley for garnish
Instructions
- Place the chicken breasts in the bottom of the crockpot.
- In a separate bowl, whisk together the cream of chicken soup, chicken broth, Italian seasoning, salt, and pepper.
- Pour the sauce mixture over the chicken in the crockpot.
- Cover and cook on low for 4-6 hours or high for 2-3 hours, until the chicken is cooked through.
- About 30 minutes before serving, add your chosen pasta directly into the crockpot.
- Just before serving, stir in the shredded cheese until it melts and incorporates fully.
Notes
Serve with a light salad and garlic bread. Leftovers can be stored in the refrigerator for 3-4 days or frozen for up to three months.
