A creamy, cheesy chicken rice casserole that’s easy to make and perfect for busy families.
Ingredients

- 1½ cups long-grain white rice
- 2 cans cream of chicken or mushroom soup
- 1 cup water
- 2 cups milk
- 1 envelope onion soup mix
- 1½ cups shredded cheddar cheese
- 3 boneless, skinless chicken breasts (or thighs)
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- Grease your baking dish to prevent sticking.
- In a large bowl, mix the rice, soups, milk, water, and onion soup mix.
- Pour the mixture into the greased baking dish and add half the cheese.
- Stir gently to combine and place chicken on top.
- Cover the dish tightly with foil and bake for 90 minutes to 2 hours.
- Remove the foil and top with remaining cheese. Bake for another 10-15 minutes until cheese is melted.
- Let sit for 15-20 minutes before serving.
Notes
Feel free to customize with different proteins or add veggies for added flavor.
