Description

A creamy, cheesy chicken rice casserole that’s easy to make and perfect for busy families.


Ingredients

Scale
  • 1½ cups long-grain white rice
  • 2 cans cream of chicken or mushroom soup
  • 1 cup water
  • 2 cups milk
  • 1 envelope onion soup mix
  • 1½ cups shredded cheddar cheese
  • 3 boneless, skinless chicken breasts (or thighs)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease your baking dish to prevent sticking.
  3. In a large bowl, mix the rice, soups, milk, water, and onion soup mix.
  4. Pour the mixture into the greased baking dish and add half the cheese.
  5. Stir gently to combine and place chicken on top.
  6. Cover the dish tightly with foil and bake for 90 minutes to 2 hours.
  7. Remove the foil and top with remaining cheese. Bake for another 10-15 minutes until cheese is melted.
  8. Let sit for 15-20 minutes before serving.
