- 1 lb ground beef
- 1 small onion, diced
- 2 garlic cloves, minced
- 4 cups beef broth
- 1 (14.5-ounce) can diced tomatoes, undrained
- 1 (15-ounce) can whole kernel corn, drained
- 1 (15-ounce) can black beans, drained and rinsed
- 1 (10-ounce) can diced tomatoes with green chilies, undrained
- 1 cup diced potatoes (peeled or unpeeled)
- 1 teaspoon smoked paprika
- 1 teaspoon chili powder
- ½ teaspoon ground cumin
- Salt and black pepper, to taste
- 1 cup heavy cream or half-and-half
- 1 cup shredded cheddar cheese
Instructions
- In a large pot or Dutch oven, over medium-high heat, brown the ground beef. Break it up with a spoon as it cooks. Drain off any excess grease.
- Lower the heat to medium, and add the diced onion. Sauté for about 5-7 minutes until the onion is softened and translucent.
- Add the minced garlic and cook for about a minute until fragrant. Sprinkle in the chili powder, ground cumin, and smoked paprika, stirring well to toast the spices for another minute.
- Add the beef broth along with the undrained diced tomatoes, green chilies, diced potatoes, and drained black beans. Stir thoroughly.
- Bring the mixture to a gentle boil. Reduce the heat to low, cover, and let it simmer for at least 20-25 minutes, or until the potatoes are tender, stirring occasionally.
- Stir in the drained corn and heavy cream (or half-and-half). Warm gently without boiling.
- Taste for seasoning, adding salt and pepper as needed. Let it simmer uncovered for an additional 5 minutes. Ladle soup into bowls and top with shredded cheddar cheese before serving.
Notes
Serve with crusty bread or warm tortillas. You can customize by adding spices or vegetables.
