Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 4 cups beef broth
  • 1 (14.5-ounce) can diced tomatoes, undrained
  • 1 (15-ounce) can whole kernel corn, drained
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 (10-ounce) can diced tomatoes with green chilies, undrained
  • 1 cup diced potatoes (peeled or unpeeled)
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • ½ teaspoon ground cumin
  • Salt and black pepper, to taste
  • 1 cup heavy cream or half-and-half
  • 1 cup shredded cheddar cheese

Instructions

  1. In a large pot or Dutch oven, over medium-high heat, brown the ground beef. Break it up with a spoon as it cooks. Drain off any excess grease.
  2. Lower the heat to medium, and add the diced onion. Sauté for about 5-7 minutes until the onion is softened and translucent.
  3. Add the minced garlic and cook for about a minute until fragrant. Sprinkle in the chili powder, ground cumin, and smoked paprika, stirring well to toast the spices for another minute.
  4. Add the beef broth along with the undrained diced tomatoes, green chilies, diced potatoes, and drained black beans. Stir thoroughly.
  5. Bring the mixture to a gentle boil. Reduce the heat to low, cover, and let it simmer for at least 20-25 minutes, or until the potatoes are tender, stirring occasionally.
  6. Stir in the drained corn and heavy cream (or half-and-half). Warm gently without boiling.
  7. Taste for seasoning, adding salt and pepper as needed. Let it simmer uncovered for an additional 5 minutes. Ladle soup into bowls and top with shredded cheddar cheese before serving.

Notes

Serve with crusty bread or warm tortillas. You can customize by adding spices or vegetables.
