- 2 large boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 2 tablespoons butter
- 4 garlic cloves, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- Salt and black pepper to taste
- Fresh chopped parsley for garnish (optional)
Instructions
- Slice the chicken breasts in half horizontally or pound them to ensure even thickness. Season both sides with salt, pepper, and Italian seasoning.
- In a skillet over medium heat, heat the olive oil. Add the seasoned chicken and sear until golden brown and cooked through, about 4–5 minutes per side. Once cooked, remove the chicken from the skillet.
- Lower the heat and add the butter to the same skillet. Once melted, add the minced garlic and sauté until fragrant, about 1 minute.
- Pour in the heavy cream and use a wooden spoon to deglaze the pan, scraping up any crispy bits. Add the grated Parmesan and let the mixture simmer until it thickens, stirring occasionally.
- Return the cooked chicken to the skillet and let it simmer in the sauce for 2–3 minutes, ensuring it’s heated through and well coated.
Notes
For a lighter version, substitute heavy cream with half-and-half. To make it dairy-free, use nutritional yeast instead of Parmesan.
