- 8 oz whole wheat pasta
- 1 lb lean chicken breast, diced
- 1 cup Greek yogurt
- 2 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- 1 tbsp olive oil
- Fresh parsley, chopped (optional for garnish)
Instructions
- Cook the whole wheat pasta according to the package instructions. Once cooked, drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add the diced chicken breast, seasoning it with salt and pepper. Sauté until browned and fully cooked, about 5-7 minutes.
- Lower the heat and add the minced garlic to the skillet. Sauté for another minute until fragrant.
- Stir in the Greek yogurt and Parmesan cheese, mixing until well combined and creamy.
- Toss in the cooked pasta, ensuring each strand is coated with the sauce.
- Serve warm, garnished with fresh chopped parsley, if desired.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat with a splash of water to loosen the sauce.
