- 1 cup feta cheese, crumbled
- 1 cup heavy cream
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste

Instructions
- Cook the gnocchi according to package instructions until they float to the surface. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1-2 minutes.
- Add the fresh spinach and cook until wilted, roughly 2-3 minutes.
- Pour in the heavy cream and bring to a simmer, stirring frequently to avoid burning.
- Add the cooked gnocchi and crumbled feta cheese, gently stirring to combine.
- Taste and season with salt and pepper as needed.
- Serve hot, topping with grated Parmesan cheese if desired.
Notes
For a healthier version, swap half of the heavy cream for vegetable broth. Leftovers can be stored in the fridge for up to 2 days; add a splash of cream or milk when reheating.
