Creamy Gnocchi with Spinach and Feta

  • Total Time: 30 minutes
  • Yield: 4 servings 1x
  • Diet: Vegetarian

Description

A delightful dish of tender gnocchi in a rich, creamy sauce with fresh spinach and tangy feta cheese, perfect for weeknight dinners or impressing guests.

Ingredients

Scale
  • 1 package gnocchi
  • 2 cups fresh spinach
  • 1 cup feta cheese, crumbled
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving (optional)

Instructions

  1. Cook the gnocchi according to package instructions until they float to the surface. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1-2 minutes.
  3. Add the fresh spinach and cook until wilted, roughly 2-3 minutes.
  4. Pour in the heavy cream and bring to a simmer, stirring frequently to avoid burning.
  5. Add the cooked gnocchi and crumbled feta cheese, gently stirring to combine.
  6. Taste and season with salt and pepper as needed.
  7. Serve hot, topping with grated Parmesan cheese if desired.

Notes

For a healthier version, swap half of the heavy cream for vegetable broth. Leftovers can be stored in the fridge for up to 2 days; add a splash of cream or milk when reheating.
