Description

Ingredients

  • 1 package (about 16 oz) gnocchi
  • 2 cups fresh spinach
  • 1 cup crumbled feta cheese
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Parmesan cheese for serving (optional)

Instructions

  1. In a large pot, bring water to a boil and cook the gnocchi according to the package instructions. Once cooked, drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
  3. Toss in the fresh spinach and cook until it’s wilted, about 2 minutes.
  4. Gradually pour in the heavy cream and bring the mixture to a gentle simmer.
  5. Stir in the crumbled feta cheese, allowing it to melt and create a creamy mixture.
  6. Add the cooked gnocchi to the skillet, tossing everything to ensure the gnocchi is well-coated in the sauce.
  7. Season with salt and pepper to taste.
  8. Plate while hot and top with grated Parmesan cheese if desired!

Notes

Feel free to substitute low-fat cream for a lighter version, or add sun-dried tomatoes for extra flavor.
