- 1 package (about 16 oz) gnocchi
- 2 cups fresh spinach
- 1 cup crumbled feta cheese
- 1 cup heavy cream
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste
- Parmesan cheese for serving (optional)
Instructions
- In a large pot, bring water to a boil and cook the gnocchi according to the package instructions. Once cooked, drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
- Toss in the fresh spinach and cook until it’s wilted, about 2 minutes.
- Gradually pour in the heavy cream and bring the mixture to a gentle simmer.
- Stir in the crumbled feta cheese, allowing it to melt and create a creamy mixture.
- Add the cooked gnocchi to the skillet, tossing everything to ensure the gnocchi is well-coated in the sauce.
- Season with salt and pepper to taste.
- Plate while hot and top with grated Parmesan cheese if desired!
Notes
Feel free to substitute low-fat cream for a lighter version, or add sun-dried tomatoes for extra flavor.
