  • 2 Carrots
  • 2 tablespoons Honey

Instructions

  1. Season the chicken: Sprinkle salt, pepper, and your choice of herbs on the chicken thighs.
  2. Sear the chicken: Heat olive oil in a skillet over medium heat. Cook the chicken until it’s golden brown and no longer pink inside—about 6–7 minutes per side.
  3. Prepare the potatoes: Peel and chop the potatoes, then boil them in salted water until tender. Drain, and mash them with butter and milk until smooth. Season to taste.
  4. Glaze the carrots: In another pan, sauté sliced carrots in olive oil. Once tender, drizzle honey and cook for a few more minutes until glazed.
