- 4 Chicken Thighs
- 1 cup Cream
- 2 tablespoons Fresh Herbs (Thyme, Rosemary, Parsley)
- Salt to taste
- Pepper to taste
- 4 Potatoes (Russets)
- 2 tablespoons Butter
- 1/2 cup Milk
- 2 Carrots
- 2 tablespoons Honey
- 2 tablespoons Olive Oil
Instructions
- Season the chicken: Sprinkle salt, pepper, and your choice of herbs on the chicken thighs.
- Sear the chicken: Heat olive oil in a skillet over medium heat. Cook the chicken until it’s golden brown and no longer pink inside—about 6–7 minutes per side.
- Prepare the potatoes: Peel and chop the potatoes, then boil them in salted water until tender. Drain, and mash them with butter and milk until smooth. Season to taste.
- Glaze the carrots: In another pan, sauté sliced carrots in olive oil. Once tender, drizzle honey and cook for a few more minutes until glazed.
- Serve: Group the creamy herb chicken with mashed potatoes and honey glazed carrots on your plate for a comforting meal.
Notes
Serve with a crisp green salad or crusty bread to soak up the sauce. Leftovers can be stored in the refrigerator for up to three days.
