- 1 package Frozen Puff Pastry (thawed)
- 4 tablespoons Unsalted Butter
- 8 ounces Thick-Cut Bacon (cooked until crispy)
- 2 pounds Russet or Yukon Gold Potatoes
- 1 cup Onion (sliced)
- 2 tablespoons Fresh Dill (or parsley)
- 1 cup Heavy Cream
- Salt, to taste
- Pepper, to taste
- 2 tablespoons Chives or Scallions (chopped)
Instructions
- Preheat your oven to 400°F (200°C) while you prepare the filling.
- Peel and chop the potatoes into equal pieces. Boil them in salted water until tender, about 15-20 minutes.
- In a skillet, melt the unsalted butter over medium heat. Add the sliced onion and cook until they are soft and translucent.
- Drain the boiled potatoes and mash them in a bowl. Stir in the cooked onions, crispy bacon pieces, fresh herbs, heavy cream, salt, and pepper until combined and smooth.
- Roll out your thawed puff pastry on a lightly floured surface. Place it into your pie dish, trimming any excess overhang.
- Pour the creamy filling into the pastry shell and spread it out evenly.
- Bake in the preheated oven for about 30-35 minutes, or until the pastry is golden brown and flaky.
- Let it cool for a few minutes before slicing and serving.
