  • 2 pounds Russet or Yukon Gold Potatoes
  • 1 cup Onion (sliced)
  • 2 tablespoons Fresh Dill (or parsley)
  • 1 cup Heavy Cream
  • Salt, to taste
  • Pepper, to taste
  • 2 tablespoons Chives or Scallions (chopped)

Instructions

  1. Preheat your oven to 400°F (200°C) while you prepare the filling.
  2. Peel and chop the potatoes into equal pieces. Boil them in salted water until tender, about 15-20 minutes.
  3. In a skillet, melt the unsalted butter over medium heat. Add the sliced onion and cook until they are soft and translucent.
  4. Drain the boiled potatoes and mash them in a bowl. Stir in the cooked onions, crispy bacon pieces, fresh herbs, heavy cream, salt, and pepper until combined and smooth.
  5. Roll out your thawed puff pastry on a lightly floured surface. Place it into your pie dish, trimming any excess overhang.
  6. Pour the creamy filling into the pastry shell and spread it out evenly.
  7. Bake in the preheated oven for about 30-35 minutes, or until the pastry is golden brown and flaky.
