- 4 cups chicken broth
- 1 cup heavy cream
- 1/2 cup celery, diced
- 1/2 cup onions, diced
- 1/2 cup bell peppers, diced
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions
- In a large pot over medium heat, add a bit of oil, then sauté the diced onions, celery, and bell peppers until they soften—about 5-7 minutes.
- Stir in the minced garlic and cook for one additional minute until fragrant.
- Pour in the chicken broth and bring the mixture to a simmer.
- Add the shredded chicken, cream cheese, and heavy cream. Stir until everything is well combined and heated through.
- Season with thyme, salt, and pepper to taste.
- Serve hot, and garnish with fresh herbs if you like!
