Description

A comforting and creamy low carb chicken casserole that’s easy to prepare, packed with flavor, and perfect for busy weeknights.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup cauliflower florets
  • 1 cup broccoli florets
  • 1 cup heavy cream
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 2 cloves garlic, minced
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Chopped parsley for garnish (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, add the olive oil and heat it over medium heat.
  3. Sauté the minced garlic until it becomes fragrant, about 1 minute.
  4. Add the cauliflower and broccoli. Cook for 3 to 5 minutes until just tender.
  5. In a large mixing bowl, combine the cooked chicken, sautéed veggies, heavy cream, shredded cheese, onion powder, paprika, along with salt and pepper to taste.
  6. Pour the mixture into a casserole dish and spread it evenly.
  7. Bake for 25-30 minutes or until bubbly and golden on top.
  8. Garnish with chopped parsley right before serving.

Notes

For a creamier texture, use full-fat cheese and consider adding cream cheese.
