- 5 cups broccoli florets (fresh or frozen, blanched if using frozen)
- 8 slices cooked turkey bacon, chopped
- 4 cups cooked chicken, shredded or diced (rotisserie chicken works great)
- 3 cloves garlic, minced
- ½ cup shredded mozzarella
- ½ cup shredded cheddar
- 1 cup ranch dressing (low-carb version recommended)
- ½ cup shredded cheddar (for topping)
- ½ cup shredded mozzarella (for topping)
Instructions
- Preheat your oven to 375°F and lightly grease a 9×13-inch baking dish.
- Steam or blanch the broccoli until just tender, then drain well and set aside.
- Combine the cooked chicken, broccoli, chopped turkey bacon, minced garlic, mozzarella, cheddar, and ranch dressing in a large bowl. Stir until everything is evenly coated.
- Spread this chicken and vegetable mixture evenly in the greased baking dish.
- Top the casserole with the extra mozzarella and cheddar cheese.
- Bake in the preheated oven for 25–30 minutes or until bubbly and golden on top.
- Allow the casserole to rest for 5–10 minutes before serving.
