Ingredients

  • 4 medium sweet potatoes
  • 2 cups mushrooms, chopped
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh herbs for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Scrub the sweet potatoes and pierce them with a fork. Place them on a baking sheet and bake for 45-60 minutes until tender.
  3. While the potatoes are baking, heat olive oil in a skillet over medium heat. Add minced garlic and chopped mushrooms and sauté until the mushrooms are soft.
  4. Add the spinach to the skillet and cook until wilted.
  5. Pour in the heavy cream and stir to combine. Season with salt and pepper to taste.
  6. Once the sweet potatoes are done, let them cool slightly, then slice them open and fluff the insides with a fork.
  7. Spoon the mushroom and spinach mixture into the sweet potato halves.
  8. Garnish with fresh herbs if desired and serve warm.
