			- 4 medium sweet potatoes
 - 2 cups mushrooms, chopped
 - 2 cups fresh spinach
 - 1 cup heavy cream
 - 2 tablespoons olive oil
 - 3 cloves garlic, minced
 - Salt and pepper to taste
 - Fresh herbs for garnish (optional)
 
Instructions
- Preheat your oven to 400°F (200°C).
 - Scrub the sweet potatoes and pierce them with a fork. Place them on a baking sheet and bake for 45-60 minutes until tender.
 - While the potatoes are baking, heat olive oil in a skillet over medium heat. Add minced garlic and chopped mushrooms and sauté until the mushrooms are soft.
 - Add the spinach to the skillet and cook until wilted.
 - Pour in the heavy cream and stir to combine. Season with salt and pepper to taste.
 - Once the sweet potatoes are done, let them cool slightly, then slice them open and fluff the insides with a fork.
 - Spoon the mushroom and spinach mixture into the sweet potato halves.
 - Garnish with fresh herbs if desired and serve warm.
