Ingredients

- 2 cups shredded rotisserie chicken
- 8 oz pasta (penne or fettuccine)
- 1 cup heavy cream
- 1/2 cup freshly grated Parmesan cheese
- 3 cloves garlic, minced
- 1 cup low-sodium chicken broth
- 2 cups fresh spinach
- Salt and pepper to taste
- 1 tbsp olive oil
Instructions
- Cook pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Sauté minced garlic for about one minute until it’s aromatic.
- Pour in the heavy cream and chicken broth; stir well and let it simmer for around five minutes until slightly thickened.
- Add the shredded chicken and spinach, cooking until the spinach has wilted (about two minutes).
- Toss in the cooked pasta, mixing until all components are evenly coated. Season with salt and pepper according to your preference.
Notes
For a lighter version, use lower-fat cream and add more vegetables. Pair with a crisp salad or garlic bread for a complete meal.
