Ingredients

  • 2 cups shredded rotisserie chicken
  • 8 oz pasta (penne or fettuccine)
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 3 cloves garlic, minced
  • 1 cup low-sodium chicken broth
  • 2 cups fresh spinach
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

  1. Cook pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Sauté minced garlic for about one minute until it’s aromatic.
  3. Pour in the heavy cream and chicken broth; stir well and let it simmer for around five minutes until slightly thickened.
  4. Add the shredded chicken and spinach, cooking until the spinach has wilted (about two minutes).
  5. Toss in the cooked pasta, mixing until all components are evenly coated. Season with salt and pepper according to your preference.

Notes

For a lighter version, use lower-fat cream and add more vegetables. Pair with a crisp salad or garlic bread for a complete meal.
