Description

Ingredients

  • 1 cup ripe tomatoes (diced)
  • 1 cup heavy cream
  • 4 cloves fresh garlic (minced)
  • 2 tbsp extra virgin olive oil
  • 1/4 cup fresh basil (chopped)
  • Salt and pepper to taste

Instructions

  1. In a large pot, bring salted water to a boil and cook the pasta according to the package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until it turns golden brown.
  3. Toss in the diced tomatoes along with salt and pepper. Let this mixture simmer for about 5 minutes to allow the flavors to meld.
  4. Lower the heat, then stir in the heavy cream. Mix it well until it’s smooth and all ingredients are fully combined.
  5. Toss the cooked pasta into the skillet, ensuring it’s evenly coated with the luscious sauce.
  6. Serve the pasta topped with fresh basil and a sprinkle of grated Parmesan cheese if desired.
