Ingredients

- 8 oz penne or fettuccine pasta
- 4 cloves of fresh garlic, minced
- 1 can (14.5 oz) diced tomatoes (no added sugar)
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- Boil a large pot of salted water, then cook the pasta according to package instructions until al dente, about 8-10 minutes.
- While the pasta cooks, heat the olive oil in a skillet over medium heat.
- Sauté the minced garlic until it’s fragrant and golden brown, which should take about 2 minutes.
- Add the diced tomatoes along with their juices. Allow them to simmer for about 5 minutes until the mixture thickens slightly.
- Reduce the heat and stir in the heavy cream, letting it bubble gently for 2 minutes.
- Mix in the grated Parmesan cheese until it melts, followed by seasoning with salt and pepper.
- Drain the pasta, reserving some cooking water. Combine the pasta with the sauce, adding the reserved water if necessary for desired consistency.
- Serve hot, garnished with more Parmesan cheese if you like.
Notes
Feel free to swap penne for any pasta shape; for a lighter version, replace heavy cream with half-and-half or a plant-based cream substitute.
