Description

A comforting and quick creamy pasta dish bursting with flavors of fresh garlic and vibrant tomatoes, perfect for busy weeknights.


Ingredients

  • 8 oz penne or fettuccine pasta
  • 4 cloves of fresh garlic, minced
  • 1 can (14.5 oz) diced tomatoes (no added sugar)
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Boil a large pot of salted water, then cook the pasta according to package instructions until al dente, about 8-10 minutes.
  2. While the pasta cooks, heat the olive oil in a skillet over medium heat.
  3. Sauté the minced garlic until it’s fragrant and golden brown, which should take about 2 minutes.
  4. Add the diced tomatoes along with their juices. Allow them to simmer for about 5 minutes until the mixture thickens slightly.
  5. Reduce the heat and stir in the heavy cream, letting it bubble gently for 2 minutes.
  6. Mix in the grated Parmesan cheese until it melts, followed by seasoning with salt and pepper.
  7. Drain the pasta, reserving some cooking water. Combine the pasta with the sauce, adding the reserved water if necessary for desired consistency.
  8. Serve hot, garnished with more Parmesan cheese if you like.

Notes

Feel free to swap penne for any pasta shape; for a lighter version, replace heavy cream with half-and-half or a plant-based cream substitute.
