Description

Ingredients

  • 8 oz Pasta (spaghetti or penne)
  • 4 Fresh tomatoes (or 1 can diced tomatoes)
  • 4 cloves Garlic (minced)
  • 1 cup Heavy cream
  • 2 tbsp Olive oil
  • 1/2 cup Parmesan cheese (grated)
  • Fresh basil (for garnish)
  • Salt and pepper (to taste)

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Add pasta and cook until al dente. Reserve 1 cup of pasta water before draining.
  2. Prepare the Sauce: In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute. Add diced tomatoes and simmer until softened.
  3. Create Creaminess: Stir in heavy cream and let it simmer for a few minutes. Add reserved pasta water gradually until you reach your desired sauce consistency.
  4. Combine: Toss the cooked pasta into the skillet, coating it well with the sauce. Mix in grated Parmesan cheese and season with salt and pepper.
  5. Serve: Garnish with fresh basil before plating.

Notes

Serve with a fresh green salad and garlic bread for a complete meal. Add red pepper flakes for a spicy kick!
