Instructions
- Cook the tortellini: Follow the package instructions for cooking the cheese-stuffed tortellini. Once done, drain and set aside.
- Crisp the pancetta: In a large pan, add the pancetta and cook over medium heat until it’s crispy.
- Make the egg mixture: In a bowl, whisk together the eggs and grated Parmesan cheese until well combined.
- Combine: Add the cooked tortellini to the pan with the crispy pancetta, then remove the pan from the heat.
- Create the sauce: Quickly pour the egg mixture over the hot tortellini, tossing gently so the heat cooks the eggs and forms a creamy sauce.
- Season: Sprinkle with salt and black pepper to taste.
