A one-pan creamy pasta dish with tender chicken, fresh spinach, and cherry tomatoes, perfect for weeknight dinners.

- 8 ounces of fettuccine or your choice of pasta
- 1 pound of boneless, skinless chicken breasts
- 2 tablespoons of olive oil
- 3 cloves of garlic, minced
- 1 cup of cherry tomatoes, halved
- 3 cups of fresh spinach
- 1 cup of heavy cream
- 1/2 cup of grated Parmesan cheese
- Salt and pepper to taste
- Fresh basil for garnish (optional)
Instructions
- Cook the pasta according to package instructions; drain and set aside.
- Heat olive oil in a large skillet over medium-high heat. Season chicken breasts with salt and pepper, then cook until golden brown and cooked through—about 6-7 minutes per side. Remove chicken from the skillet and slice it.
- Add the minced garlic to the same skillet and sauté for 1 minute until fragrant.
- Toss in the halved cherry tomatoes and cook until they soften, about 2-3 minutes.
- Add the fresh spinach and cook until wilted.
- Lower the heat, pour in the heavy cream, and stir to combine. Add the Parmesan cheese and mix well until you achieve a creamy sauce.
- Toss the cooked pasta and sliced chicken into the skillet, mixing until everything is coated with the sauce.
- Taste and adjust seasoning if necessary, then garnish with fresh basil before serving warm.
Notes
Serve with a side salad or garlic bread. Store leftovers in an airtight container in the refrigerator for 3-4 days.
