  • 1 lb ground beef or turkey
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup almond flour
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 1 cup heavy cream
  • 1 cup spinach, chopped
  • 1/2 cup sun-dried tomatoes, chopped
  • 2 tbsp olive oil
  • Fresh basil for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine the ground beef or turkey, Parmesan cheese, almond flour, egg, minced garlic, Italian seasoning, salt, and pepper. Mix until well combined and form into meatballs.
  3. Heat olive oil in a skillet over medium heat. Add the meatballs and cook until browned on all sides.
  4. In a separate pot, pour in the heavy cream, then add the chopped spinach and sun-dried tomatoes. Simmer until the spinach wilts.
  5. Carefully place the browned meatballs into the creamy sauce, cover the pot, and let cook for an additional 10 minutes until the meatballs are cooked through.
  6. Serve the dish hot, garnished with fresh basil for that lovely finish.
