- 1 lb ground beef or turkey
- 1/4 cup grated Parmesan cheese
- 1/4 cup almond flour
- 1 egg
- 2 cloves garlic, minced
- 1 tsp Italian seasoning

- 1 cup heavy cream
- 1 cup spinach, chopped
- 1/2 cup sun-dried tomatoes, chopped
- 2 tbsp olive oil
- Fresh basil for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- In a large mixing bowl, combine the ground beef or turkey, Parmesan cheese, almond flour, egg, minced garlic, Italian seasoning, salt, and pepper. Mix until well combined and form into meatballs.
- Heat olive oil in a skillet over medium heat. Add the meatballs and cook until browned on all sides.
- In a separate pot, pour in the heavy cream, then add the chopped spinach and sun-dried tomatoes. Simmer until the spinach wilts.
- Carefully place the browned meatballs into the creamy sauce, cover the pot, and let cook for an additional 10 minutes until the meatballs are cooked through.
- Serve the dish hot, garnished with fresh basil for that lovely finish.
