Description
A quick and delicious pasta dish featuring cheese ravioli in a creamy sauce with sun-dried tomatoes and fresh spinach.

- 1 lb cheese ravioli (fresh or frozen)
- 1 tbsp olive oil
- 3 cloves garlic (minced)
- 1 cup cherry tomatoes (halved)
- 2 cups fresh spinach
- 1/2 cup sun-dried tomatoes (chopped)
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup grated Parmesan cheese
- Salt and black pepper to taste
Instructions
- Preheat a large skillet over medium heat and add the olive oil.
- Sauté the minced garlic for about 30 seconds, just until it becomes fragrant.
- Add the cherry and sun-dried tomatoes to the skillet and cook for 2–3 minutes until softened.
- Stir in the heavy cream and chicken broth, mixing well.
- Add the Parmesan cheese along with salt and pepper, and let the mixture simmer until slightly thickened.
- Incorporate the fresh spinach until it wilts, then gently mix in the cooked ravioli.
- Simmer briefly to warm everything through, then serve immediately, garnished with extra Parmesan if desired.
Notes
Best served warm, with additional grated Parmesan on top. Pairs nicely with garlic bread or a green salad.
