Description

Ingredients

  • 1 tbsp olive oil
  • 3 cloves garlic (minced)
  • 1 cup cherry tomatoes (halved)
  • 2 cups fresh spinach
  • 1/2 cup sun-dried tomatoes (chopped)
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • Salt and black pepper to taste

Instructions

  1. Preheat a large skillet.
  2. Sauté minced garlic, then add fresh and sun-dried tomatoes.
  3. Stir in creamy ingredients and finish by incorporating spinach and ravioli.
  4. Cook the ravioli according to package instructions if fresh or ensure frozen ones are thawed.
  5. Sauté garlic in olive oil for about 30 seconds or until fragrant.
  6. Add cherry and sun-dried tomatoes; cook for 2–3 minutes until softened.
  7. Create the sauce by pouring in heavy cream and chicken broth, stirring well and allowing to simmer.
  8. Incorporate grated Parmesan, and seasoning; let it simmer until slightly thickened.
  9. Add fresh spinach, stirring until wilted.
  10. Combine cooked ravioli gently, ensuring they’re well-coated before serving warm.

Notes

Use fresh ingredients for best flavor. Don’t overcook spinach to retain color and nutrients. Feel free to customize with additional ingredients.
