- 1 lb cheese ravioli (fresh or frozen)
- 1 tbsp olive oil
- 3 cloves garlic (minced)
- 1 cup cherry tomatoes (halved)
- 2 cups fresh spinach
- 1/2 cup sun-dried tomatoes (chopped)
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup grated Parmesan cheese
- Salt and black pepper to taste
Instructions
- Preheat a large skillet.
- Sauté minced garlic, then add fresh and sun-dried tomatoes.
- Stir in creamy ingredients and finish by incorporating spinach and ravioli.
- Cook the ravioli according to package instructions if fresh or ensure frozen ones are thawed.
- Sauté garlic in olive oil for about 30 seconds or until fragrant.
- Add cherry and sun-dried tomatoes; cook for 2–3 minutes until softened.
- Create the sauce by pouring in heavy cream and chicken broth, stirring well and allowing to simmer.
- Incorporate grated Parmesan, and seasoning; let it simmer until slightly thickened.
- Add fresh spinach, stirring until wilted.
- Combine cooked ravioli gently, ensuring they’re well-coated before serving warm.
Notes
Use fresh ingredients for best flavor. Don’t overcook spinach to retain color and nutrients. Feel free to customize with additional ingredients.
