Ingredients

- 1 can white beans, drained and rinsed
- 2 cups cherry tomatoes, halved
- 2 cups vegetable broth
- 1 cup spinach or kale
- 1 onion, diced
- 3 cloves garlic, minced
- 1 teaspoon olive oil
- Salt and pepper to taste
- 1 teaspoon Italian seasoning (optional)
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the diced onion and sauté until it softens, about 5 minutes.
- Stir in the minced garlic and cook until fragrant, about 1 minute.
- Add the halved cherry tomatoes and cook until they begin to break down, roughly 3-4 minutes.
- Pour in the vegetable broth, add the drained beans, spinach or kale, and season with salt, pepper, and Italian seasoning if using.
- Bring the mixture to a boil, then reduce the heat and let it simmer for 15 minutes.
- Dish out and enjoy the comforting flavors!
