Description

Ingredients

  • 1 can white beans, drained and rinsed
  • 2 cups cherry tomatoes, halved
  • 2 cups vegetable broth
  • 1 cup spinach or kale
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon olive oil
  • Salt and pepper to taste
  • 1 teaspoon Italian seasoning (optional)

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the diced onion and sauté until it softens, about 5 minutes.
  3. Stir in the minced garlic and cook until fragrant, about 1 minute.
  4. Add the halved cherry tomatoes and cook until they begin to break down, roughly 3-4 minutes.
  5. Pour in the vegetable broth, add the drained beans, spinach or kale, and season with salt, pepper, and Italian seasoning if using.
  6. Bring the mixture to a boil, then reduce the heat and let it simmer for 15 minutes.
