- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 medium carrots, diced
- 2 stalks celery, diced
- 6 cups vegetable broth
- 1 cup heavy cream (or coconut cream for a vegan option)
- 1 package (16 oz) gnocchi
- 2 cups fresh spinach
- Salt and pepper to taste
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the diced onion and cook until translucent. Toss in garlic, carrots, and celery. Cook for around 5-7 minutes until tender.
- Pour in 6 cups of vegetable broth and bring to a boil.
- Reduce the heat to low, then slowly add the heavy cream or coconut cream, stirring to combine.
- Add the gnocchi and let them cook according to package instructions, usually about 2-3 minutes.
- Stir in fresh spinach until wilted. Season with salt and pepper to your liking.
Notes
Feel free to customize with different vegetables or herbs for added flavor. Serve with crusty bread or a salad for a complete meal.
