Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes with green chilies
  • 1 cup chicken broth
  • 1 cup heavy cream or half-and-half
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, sour cream, green onions

Instructions

  1. Place the chicken breasts in the crockpot.
  2. Add the rinsed white beans, diced tomatoes, chicken broth, diced onion, minced garlic, ground cumin, chili powder, and season with salt and pepper.
  3. Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is fully cooked.
  4. Once done, remove the chicken from the pot and shred it using two forks.
  5. Return the shredded chicken to the crockpot and stir in the heavy cream. Let it heat through for an additional 15-30 minutes.
  6. Serve in bowls and add your favorite toppings if desired.

Notes

For a lighter option, consider using Greek yogurt instead of heavy cream. You can also use frozen chicken, just increase the cooking time.
