- 2½ tbsp mayonnaise
- 1 tsp yellow mustard
- 1 tsp white vinegar or lemon juice
- Salt, to taste
- Black pepper, to taste
- Green food coloring (gel or liquid)
- Red food coloring or ketchup (for veins)
- 6 black or green olives, sliced into rounds
- Garlic powder, paprika, or hot sauce (optional)
- Fresh chives or parsley for garnish (optional)
- Sweet relish for tang (optional)
Instructions
- Place eggs in a pot, cover with water, and bring to a gentle boil.
- Cover the pot, turn off the heat, and let the eggs sit for 12 minutes.
- Transfer the eggs to an ice bath to cool down quickly.
- Carefully peel the eggs once cool.
- Slice each egg in half lengthwise, and scoop the yolks into a bowl.
- Mash the yolks with mayonnaise, mustard, vinegar, salt, and pepper to taste.
- Add green food coloring until you reach your desired shade.
- Pipe this green mixture into each egg white half.
- Place an olive slice in the center of each yolk mound to make the “pupil.”
- Use a toothpick dipped in red food coloring or ketchup to draw veins outward from the olive.
- Refrigerate the eggs until you are ready to serve.
- Optionally, garnish with paprika or herbs for an extra touch.
