Ingredients

  • 6 large eggs
  • 2½ tbsp mayonnaise
  • 1 tsp yellow mustard
  • 1 tsp white vinegar or lemon juice
  • Salt, to taste
  • Black pepper, to taste
  • Green food coloring (gel or liquid)
  • Red food coloring or ketchup (for veins)
  • 6 black or green olives, sliced into rounds
  • Garlic powder, paprika, or hot sauce (optional)
  • Fresh chives or parsley for garnish (optional)
  • Sweet relish for tang (optional)

Instructions

  1. Place eggs in a pot, cover with water, and bring to a gentle boil.
  2. Cover the pot, turn off the heat, and let the eggs sit for 12 minutes.
  3. Transfer the eggs to an ice bath to cool down quickly.
  4. Carefully peel the eggs once cool.
  5. Slice each egg in half lengthwise, and scoop the yolks into a bowl.
  6. Mash the yolks with mayonnaise, mustard, vinegar, salt, and pepper to taste.
  7. Add green food coloring until you reach your desired shade.
  8. Pipe this green mixture into each egg white half.
  9. Place an olive slice in the center of each yolk mound to make the “pupil.”
  10. Use a toothpick dipped in red food coloring or ketchup to draw veins outward from the olive.
  11. Refrigerate the eggs until you are ready to serve.
  12. Optionally, garnish with paprika or herbs for an extra touch.
