Description
Delicious, crunchy zucchini fries that are a low-carb alternative perfect for snacks or sides.
Ingredients
Scale
- 3 medium zucchinis (sliced into fry shapes)
- 2 egg whites (mixed with 1 teaspoon Cajun seasoning)
- 1 cup Parmesan cheese (mixed with 1 tablespoon Cajun seasoning)
- 1/2 cup mayo
- 2 tablespoons heavy cream
- 2 tablespoons lemon juice
- 1 tablespoon Cajun seasoning
- 2 egg yolks (beaten)
Instructions
- Preheat the oven: Set your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Prepare the zucchini: Slice each zucchini into fry shapes. Aim for uniform size to ensure even cooking.
- Create your dredging stations: In one bowl, whisk together the egg whites and Cajun seasoning. In a second bowl, combine the Parmesan cheese and remaining Cajun seasoning.
- Coat the zucchini: Dip each zucchini fry first in the egg mixture, then dredge in the Parmesan mix, ensuring each piece is evenly coated.
- Bake: Arrange the coated zucchini fries in a single layer on the prepared baking sheet. Bake for about 20-25 minutes or until golden and crispy, flipping halfway through.
- Prepare the Cajun Aioli (Optional): While the fries are baking, whisk together mayo, heavy cream, lemon juice, Cajun seasoning, and egg yolks to create a creamy dip.
- Serve and enjoy: Allow the fries to cool slightly before serving with your homemade Cajun aioli.
Notes
Serve with Cajun aioli, marinara sauce, or ranch dressing for dipping.
