Description

Ingredients

  • 2 medium-sized sweet potatoes
  • 3 tablespoons unsalted butter
  • 2 tablespoons grated Parmesan cheese
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon fresh rosemary, chopped
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Peel and cube the sweet potatoes into 1-inch cubes for even cooking.
  3. Melt the butter in a bowl and mix in the Parmesan, parsley, rosemary, garlic powder, salt, and pepper.
  4. Toss the sweet potato cubes in the butter mixture until they are fully coated.
  5. Spread the coated sweet potatoes in a single layer on a baking sheet, ensuring there’s space between them for crispiness.
  6. Bake for 20 to 25 minutes, flipping halfway through, until they’re golden brown and tender to a fork.

Notes

For a vegan version, swap out Parmesan for nutritional yeast. These bites can also be frozen for up to a month.
