- 2 medium-sized sweet potatoes
- 3 tablespoons unsalted butter
- 2 tablespoons grated Parmesan cheese
- 1 tablespoon fresh parsley, chopped
- 1 teaspoon fresh rosemary, chopped
- 1/2 teaspoon garlic powder
- Salt and black pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Peel and cube the sweet potatoes into 1-inch cubes for even cooking.
- Melt the butter in a bowl and mix in the Parmesan, parsley, rosemary, garlic powder, salt, and pepper.
- Toss the sweet potato cubes in the butter mixture until they are fully coated.
- Spread the coated sweet potatoes in a single layer on a baking sheet, ensuring there’s space between them for crispiness.
- Bake for 20 to 25 minutes, flipping halfway through, until they’re golden brown and tender to a fork.
Notes
For a vegan version, swap out Parmesan for nutritional yeast. These bites can also be frozen for up to a month.
