A delightful twist on the classic Caesar salad, featuring crispy chicken cutlets, zesty Caesar dressing, and crunchy romaine in a baguette.

- ½ cup full-fat mayonnaise
- 3 tbsp Greek yogurt
- 1 tsp Dijon mustard
- 1 tsp Worcestershire sauce
- 2 tbsp lemon juice
- ¼ cup freshly grated Parmesan cheese
- 1–2 garlic cloves, minced
- ¼ tsp black pepper
- Pinch of sea salt
- 5 chicken cutlets
- Sea salt and black pepper (to taste)
- Oil (for frying)
- ⅓ cup all-purpose flour
- ½ tsp salt
- ¾ tsp smoked paprika
- 2 eggs
- ¾ cup panko crumbs
- ¼ cup breadcrumbs
- 1 tsp dried parsley
- ½ tsp sea salt
- ½ tsp ground black pepper
- ½ tsp dried oregano
- 1 tsp garlic powder
- ¼ cup freshly grated Parmesan cheese
- 2 romaine hearts, chopped
- 1–2 French baguettes
- Additional freshly grated Parmesan cheese for serving
Instructions
- Prepare the Caesar dressing: In a bowl, mix mayonnaise, Greek yogurt, Dijon mustard, Worcestershire sauce, lemon juice, Parmesan cheese, minced garlic, black pepper, and sea salt until smooth. Save 4–5 tablespoons for lettuce, then refrigerate both dressing and salad separately.
- Prep the chicken: Flatten the chicken cutlets for even cooking and season generously with sea salt and pepper.
- Set up your breading station with three shallow plates. Combine flour, salt, and smoked paprika in one; beat eggs in the second; and mix panko, breadcrumbs, parsley, black pepper, sea salt, oregano, garlic powder, and Parmesan cheese in the third.
- Bread the chicken: Dredge cutlets in flour mixture, dip in egg, and press into breadcrumb mixture for even coating.
- Fry the chicken: Heat oil over medium heat. Fry chicken for 4-5 minutes on each side until golden and crispy. Transfer to a wire rack to drain excess oil.
- Assemble sandwiches: Slice baguettes, spread Caesar dressing, place crispy chicken cutlet inside, top with Caesar salad, and sprinkle extra Parmesan. Close sandwich and serve immediately.
Notes
For added flavor, marinate chicken cutlets in Caesar dressing before frying. Consider grilling the chicken as a healthier alternative.
