Ingredients

- 2 cups cooked chicken, shredded
- 1 cup shredded cheese (e.g., cheddar, Monterey Jack)
- 4 large flour tortillas
- 1 cup bell peppers, sliced
- 1/2 cup onion, sliced
- 1 tablespoon olive oil
- 1 teaspoon taco seasoning (optional)
- Salt and pepper to taste
Instructions
- Preheat the air fryer to 375°F (190°C).
- Combine the shredded chicken, cheese, bell peppers, onion, taco seasoning, salt, and pepper in a bowl. Mix well.
- Spread half of the mixture evenly over two tortillas, then top with the remaining two tortillas.
- Brush the outside of each quesadilla with olive oil.
- Place the quesadillas in the air fryer basket. Cook for 8-10 minutes, flipping halfway, until crispy and golden brown.
- Remove from the air fryer, cut into wedges, and serve warm.
Notes
Store leftovers in an airtight container in the refrigerator for up to three days. For longer storage, freeze tightly wrapped quesadillas for up to three months.
