- 1/4 cup crumbled cotija cheese
- 2 tablespoons chopped fresh cilantro
- 1 ripe avocado
- 1/4 cup Greek yogurt
- 1 tablespoon lime juice (for drizzle)
- 1 tablespoon chopped cilantro (for drizzle)

Instructions
- Soak the chicken: In a bowl, soak your chicken strips in buttermilk for at least 20 minutes.
- Prepare the coating: In a separate bowl, whisk together the flour, chili powder, smoked paprika, garlic powder, salt, and black pepper.
- Heat oil: Fill a deep skillet with vegetable oil and heat it over medium heat.
- Fry the chicken: Remove chicken strips from the buttermilk, dredge them in the seasoned flour, and fry in batches for about 4–5 minutes on each side until golden brown.
- Prepare the corn mixture: In a mixing bowl, combine corn, mayonnaise, sour cream, chili powder, lime juice, cotija cheese, and chopped cilantro.
- Make the avocado drizzle: Blend the avocado, Greek yogurt, lime juice, cilantro, and a pinch of salt until smooth.
- Warm the tortillas: Warm tortillas in a dry skillet or microwave until soft and pliable.
- Assemble the tacos: Layer crispy chicken, street corn mixture, and drizzle with avocado sauce on each tortilla.
