Ingredients

- 2 cups all-purpose flour
- 3/4 cup boiling water
- 1/4 cup chopped scallions
- 1/2 teaspoon salt
- Vegetable oil for frying
Instructions
- Combine the all-purpose flour and salt in a mixing bowl.
- Pour in the boiling water gradually, stirring until a dough forms.
- Knead the dough until it’s smooth, then cover and let it rest for 30 minutes.
- Divide the dough into 4 equal parts.
- Roll each part into a thin circle. Brush oil on each circle and sprinkle with chopped scallions.
- Roll each circle into a cylinder and coil it into a round shape, then gently flatten it.
- Heat oil in a skillet over medium heat. Fry each pancake for 3-4 minutes on each side until golden brown and crispy.
- Serve hot, and enjoy!
Notes
Serve with soy sauce, chili oil, or a tangy dipping sauce. Store leftovers in an airtight container in the fridge for up to 3 days.
