Description
A delightful dish that combines tangy dill pickles with crunchy, perfectly baked chicken, making it a lighter alternative to fried chicken.
Ingredients
Scale
- 4 chicken breasts
- 1 cup dill pickle chips
- 1 cup grated Parmesan cheese
- 1 cup breadcrumbs
- 2 eggs
- Salt and pepper to taste
- Olive oil for frying
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, crush the dill pickle chips until they resemble coarse crumbs.
- In another bowl, combine grated Parmesan cheese and breadcrumbs; mix well.
- Dip each chicken breast into the beaten eggs, ensuring it’s fully coated.
- Press the chicken into the crushed pickle chips for an even layer, followed by the cheese and breadcrumb mixture.
- Place the coated chicken on a baking sheet and drizzle lightly with olive oil.
- Bake for 20–25 minutes, or until the chicken is cooked through and golden brown.
- Serve hot and enjoy!
Notes
For added flavor, marinate the chicken in pickle juice for an hour before coating. Consider using whole-wheat breadcrumbs for a healthier option.
