Description

A satisfying double-fried chicken cheeseburger with juicy, tender meat and a crunchy exterior, topped with melted cheese, crisp lettuce, and fresh tomato.

  • 2 large boneless, skinless chicken thighs (or breasts, pounded evenly to 1/2 inch thick)
  • 1 cup buttermilk
  • 1 tsp hot sauce (like Tabasco or Frank’s RedHot)
  • 1 cup all-purpose flour
  • 1/4 cup cornstarch
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp cayenne pepper (omit for less spice)
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • Oil for frying (vegetable, canola, or peanut oil)
  • 2 brioche burger buns
  • 2 slices cheddar cheese (or your favorite cheese)
  • Lettuce leaves
  • Tomato slices
  • Dill pickles
  • 1/4 cup mayonnaise
  • 1 tbsp Sriracha or hot sauce (optional, for spicy mayo)
  • 1 tsp honey (optional, for sweet-spicy mayo)

Instructions

  1. In a bowl, combine the buttermilk and hot sauce. Add the chicken, ensuring it’s completely coated. Cover and refrigerate for at least 1 hour, or up to 12 hours for deeper flavor.
  2. In a shallow dish, mix together the flour, cornstarch, paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper until well combined.
  3. Remove the chicken from the marinade, letting any excess drip off. Dredge the chicken in the flour mixture, pressing firmly to adhere. Return it to the buttermilk, then dredge again in the flour mixture for a thick crust.
  4. Heat oil in a deep skillet or Dutch oven to 350°F (175°C). Fry the chicken for 5-6 minutes, or until golden brown and crisp, then drain on a wire rack.
  5. Let the chicken rest for about 5 minutes before frying it a second time at 375°F (190°C) for another 2-3 minutes for optimal crunch.
  6. Prepare the spicy mayo by mixing mayonnaise, Sriracha, and honey in a small bowl until smooth.
  7. Toast the brioche buns to your liking. Spread the spicy mayo on both halves. Layer the bottom bun with lettuce, tomato, pickles, and the crispy fried chicken. Top with a slice of cheddar cheese before placing on the final bun half.

Notes

These burgers pair perfectly with crispy fries, onion rings, or coleslaw. Store leftover chicken in an airtight container for up to 3 days.
