- 2 medium sweet potatoes, peeled and cut into 1/4 inch thick fries
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika (smoked paprika for added depth)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon cornstarch (optional)
Instructions
- Preheat your oven to 220°C (425°F) and place a baking sheet inside to heat up.
- Peel the sweet potatoes (if preferred) and cut them into uniform 1/4 inch thick fries.
- Soak the fries in a bowl of cold water for 30 minutes to remove excess starch.
- Drain and pat the fries dry with a paper towel.
- Toss the fries with olive oil, garlic powder, paprika, salt, and black pepper in a large bowl. If using cornstarch, add it now.
- Carefully spread the fries in a single layer on the hot baking sheet.
- Bake for 25-30 minutes, flipping halfway through, until golden brown and crispy.
- Let cool for a few minutes before serving.
Notes
For the crispiest fries, do not skip the soaking step. Spread fries in a single layer to avoid steaming.
