- 2 chicken breasts
- 1 cup Parmesan cheese, grated
- 1/2 cup fresh basil, chopped
- 1 cup breadcrumbs
- 2 eggs
- Salt, to taste
- Pepper, to taste
- 2 tablespoons olive oil
Instructions
- Preheat the oven to 400°F (200°C).
- Season the chicken breasts generously with salt and pepper.
- In a bowl, beat the eggs until well mixed.
- In another bowl, combine breadcrumbs, grated Parmesan cheese, and chopped fresh basil.
- Dip each seasoned chicken breast into the egg mixture, coating it thoroughly.
- Transfer the chicken to the breadcrumb mixture and coat it well.
- Heat olive oil in a skillet over medium heat. Once hot, add the chicken cutlets to the skillet.
- Cook each cutlet for about 3-4 minutes on each side or until golden brown.
- Transfer them to a baking sheet and bake in the oven for about 10 minutes.
Notes
Serve with a fresh garden salad or roasted vegetables for a balanced meal. You can store leftovers in an airtight container in the refrigerator for up to 3 days.
