Description

Tender chicken breasts coated in a crispy crust of Parmesan cheese and fresh basil, perfect for a quick weeknight dinner.


Ingredients

  • 2 chicken breasts
  • 1 cup Parmesan cheese, grated
  • 1/2 cup fresh basil, chopped
  • 1 cup breadcrumbs
  • 2 eggs
  • Salt, to taste
  • Pepper, to taste
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Season the chicken breasts generously with salt and pepper.
  3. In a bowl, beat the eggs until well mixed.
  4. In another bowl, combine breadcrumbs, grated Parmesan cheese, and chopped fresh basil.
  5. Dip each seasoned chicken breast into the egg mixture, coating it thoroughly.
  6. Transfer the chicken to the breadcrumb mixture and coat it well.
  7. Heat olive oil in a skillet over medium heat. Once hot, add the chicken cutlets to the skillet.
  8. Cook each cutlet for about 3-4 minutes on each side or until golden brown.
  9. Transfer them to a baking sheet and bake in the oven for about 10 minutes.

Notes

Serve with a fresh garden salad or roasted vegetables for a balanced meal. You can store leftovers in an airtight container in the refrigerator for up to 3 days.
