Ingredients

  • 4 small to medium chicken breasts (or 2 large ones, halved)
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 34 cloves garlic, minced
  • 1 cup light cream or heavy cream
  • 1 tablespoon Italian seasoning or oregano
  • 1/2 cup grated parmesan cheese
  • 1 cup spinach, chopped (optional)

Instructions

  1. Generously season both sides of the chicken with salt and pepper.
  2. Heat the olive oil in a skillet over medium-high heat. Add the seasoned chicken and cook for about 5-6 minutes per side until it reaches a crispy golden brown texture. Once done, remove the chicken from the skillet and set aside.
  3. Lower the skillet heat. Add minced garlic and sauté for about 30 seconds until fragrant. Pour in the cream while stirring continuously to blend smoothly.
  4. Mix in the Italian seasoning and parmesan cheese until you have a creamy sauce. If using spinach, stir it in now, letting it simmer for 2-3 minutes.
  5. Return the crispy chicken to the pan, generously spoon the sauce over it, and let it simmer for an additional minute before removing from heat.

Notes

For extra crunch, dredge the chicken in flour before frying. Use pre-cooked chicken for a quicker preparation.
