- 2 lb potatoes (starchy varieties like Russets)
- 7 tbsp cornstarch or 10 tbsp flour
- 1/3 cup + 1/4 cup grated Parmesan cheese
- 1 tsp garlic granules (or fresh minced garlic)
- 1/2 tsp salt
- 1/2 tsp black pepper
- 3 tbsp chopped parsley
- Cooking oil (for frying)
Instructions
- Cook the Potatoes: Boil quartered potatoes in salted water until tender, about 15-20 minutes. Drain and let them steam dry for 5-8 minutes.
- Mash the Potatoes: In a large bowl, mash the potatoes until smooth.
- Add Flavorings: Mix in cornstarch or flour, Parmesan, garlic granules, salt, and pepper until well combined.
- Shape the Balls: Roll the mixture into 1-inch balls, moistening hands with cold water if sticky.
- Heat the Oil: Bring cooking oil to 350°F (175°C).
- Fry the Balls: Cook in small batches for 5-7 minutes until golden brown.
- Drain and Season: Place on a wire rack lined with paper towels to drain excess oil, then toss in remaining Parmesan and parsley while still hot.
Notes
Best served fresh and hot. Store leftovers in an airtight container in the fridge for up to 2 days. Reheat in an air fryer or oven.
