Description

Comforting sandwiches made with tender beef chuck roast and rich au jus, perfect for any occasion.


Ingredients

  • 34 lbs beef chuck roast
  • 1 onion, thinly sliced
  • 3 cups beef broth
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon soy sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 46 hoagie rolls
  • 6 slices provolone cheese

Instructions

  1. Season the beef chuck roast generously with salt, black pepper, garlic powder, onion powder, and dried thyme. Sear the beef in a hot skillet if desired.
  2. Layer the sliced onions at the bottom of the slow cooker. Place the seasoned beef on top and add beef broth, Worcestershire sauce, and soy sauce.
  3. Cover and cook on low for 7-8 hours or high for 4-5 hours until the beef is tender.
  4. Remove the beef from the slow cooker and shred it with two forks, returning it to the juices.
  5. Lightly toast the hoagie rolls under the broiler or in a skillet until golden brown.
  6. Assemble the sandwiches by piling shredded beef on each roll and topping with provolone cheese. Broil for 1-2 minutes until the cheese melts.
  7. Strain the cooking liquid to serve as au jus for dipping.

Notes

For variations, try using different cheeses or adding jalapeños for a spicy kick.
