- 4 boneless, skinless chicken breasts
- 1 packet ranch seasoning mix
- 1 cup cream of chicken soup
- 1 cup chicken broth
- 1 cup shredded cheddar cheese
- 1/2 cup cream cheese
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions
- Place the chicken breasts in the bottom of the slow cooker.
- In a bowl, mix together the ranch seasoning, cream of chicken soup, and chicken broth until well combined.
- Pour the mixture over the chicken in the slow cooker.
- Add the cream cheese on top.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours until the chicken is cooked through.
- Shred the chicken with two forks and mix in the melted cream cheese and ranch mixture.
- Stir in the shredded cheddar cheese until melted.
- Season with salt and pepper to taste.
- Garnish with chopped parsley and serve.
Notes
This dish can be served over rice, with pasta, in tacos, or as a sandwich. Leftovers can be refrigerated for up to 4 days or frozen for up to 3 months.
