- 1 lb kielbasa, sliced
- 1 cup shredded cheddar cheese
- 1 can cream of chicken soup
- 1 cup sour cream
- 1 onion, chopped
- Salt and pepper to taste

Instructions
- Layer the diced potatoes and sliced kielbasa in the slow cooker.
- In a separate bowl, combine the cream of chicken soup, sour cream, chopped onion, salt, and pepper. Mix well.
- Pour the creamy mixture over the potatoes and kielbasa in the slow cooker.
- Top with a generous sprinkle of shredded cheddar cheese.
- Cover and cook on low for 6-8 hours or high for 3-4 hours, until the potatoes are tender and everything is bubbly.
- Serve hot, garnished with chopped chives or green onions if desired.
Notes
Use Yukon Gold potatoes for a buttery flavor, and feel free to substitute kielbasa with smoked sausage or veggie sausage for a meatless option.
